Equipped with experience from top kitchens in New York, Chicago, and San Francisco, they descended on the city, opened their own restaurants, and blew the lid off the scene. “Before that, we had three main players but they were extremely ‘Northwest’,” says Gorham. “There was no diversity. If you had dishes from those three restaurants you might not be able to tell them apart. Now we’ve gone from three great restaurants to three great restaurants on every block.” Pushing the envelope The city has come far in the last decade, and its enthusiasm for global cuisine is much of why it deserves a spot on the world stage.
